Ful medames recipe

According to some sources, there was always fava beans soup or stew served at Cleopatra’s table. More than two thousand years after the last Egyptian Queen died, these beans are still the core of Egyptian cuisine. Nationaal food ful medames is a stew, soup or dip, often mixed with garlic, tahini (sesame paste), lemon and olive oil. Find out how to make it yourself!

Ingredients

    * 1 large onion, chopped
    * 4 tbs olive oil
    * 4 garlic cloves, finely chopped
    * 1 tbs cumin powder
    * 1 tsp chili flakes
    * 2 cans (400 grams) of Egyptian fava beans
    * zest and juice of 1 lemon
    * 75 grams feta, in cubes
    * some parsley leaves, chopped
    * 3 tbs tahini

Preparation

    1. Fry the onion in 2 tablespoons of olive oil until it starts to brown. Add the garlic, cumin and chili and fry for another 5 minutes, stirring. Turn off the fire.
    2. Drain the beans but keep some of the liquid. Combine half of the fava beans, the rest of the olive oil and lemon juice and zest in a food processor and mix to a puree.
    3. Add some bean liquid to make it smoother. Season to taste.
    4. Divide the puree on a plate. Mix the rest of the beans, feta and parsley and put on top of the puree. Mix the tahini with 3 tablespoons of water and some salt until you have a smooth sauce. Pour over the ful medames.
    5. Serve with pita or Lebanese flatbread.
